“Peace & VOV” cake

½ glass of VOV
4 eggs
150g flour
150g sugar
120g potato flour or corn flour
70g softened butter
1 bag of baking powder
Salt to taste
Lemon zest
Icing sugar

Sift flour, potato flour and baking powder together. Separately, whisk the eggs with the sugar for a few minutes, then add soften butter, lemon zest and VOV. When the mixture is ready add flour, potato flour, baking powder and salt. Whisk the egg whites and gently add to the mixture. Pour the mixture into a 24 cm/10 inch cake mould and bake in the preheated oven at 180 degrees for about 40 minutes.

Once removed from the oven – and completely cold – sprinkle with icing sugar.
