Cherries, VOV and
Chocolate Cake

4 oz VOV
65g flour
3 eggs
200g cherries
125g sugar
4 oz sunflower oil
65g corn flour
1 bag baking powder
1 bag vanillin
50g chocolate drops
Salt to taste

INGREDIENTS For the icing

2 spoons VOV
50g dark chocolate
Icing sugar
Whole cherries
with stem

How to prepare Cherries, VOV and Chocolate Cake

Wash and dry the cherries, pit them and cut them in half. Whisk the eggs with salt and sugar until they become white and foamy. Add oil and VOV, and combine the whole thing, stirring well. Add the flours, sifted with baking powder and vanillin, stirring. Add the chocolate drops and the cherries – slightly covered in flour – then pour the mixture into a baking pan – oiled and covered in flour – and bake in the oven, preheated at 175 degrees for about 45 minutes.

Turn off the oven, leave the door ajar, and keep the baking tray inside for a further ten minutes. Turn then the cake on a grill, and let it cool down completely. In the meantime, prepare the icing: melt the chocolate, add VOV and put the mixture – double-boiler or bain-marie style – on a very moderate heat. Once melted and lumpless, spread it on top of the cake (already sprinkled with icing sugar), and complete the icing by adding the whole cherries.
