5 egg whites
100g icing sugar
70g white chocolate
60g corn flour
1/2 bag of baking powder
INGREDIENTS for the VOV-based custard
4 egg yolks
500ml / 1 pint of milk
Lemon zest, 1 oz VOV
How to prepare Ring-shaped cake “Yes We…VOV!”
Pour the egg yolks into a cake pan, add sugar and the sifted flour, and stir continuously, in order to avoid lumps. Mix the ingredients until the mixture is lumpless and smooth. Add cold milk – slowly – stirring continuously, lemon zest and VOV, put the mixture on the flame and bring to a boil, stirring continuously.
Lower the heat to the minimum and let it simmer for about 2 minutes, then remove from the flame. Take the ring-shaped cake – it should be cold, by now – and frost it with the VOV-based custard and ground almonds.
How to prepare the VOV-based custard
Melt chocolate and butter in a cake pan (with deep bottom). Pour the mix in a bowl, and add the icing sugar, baking powder, corn flour, and stir it up with an electric whisk, in order to get rid of lumps.
Separately, whisk the egg whites until soft peaks form, and gently add them to the mix. Pour into a 22cm/8-inch cake mould, and bake at 170 degrees for 35/40 minutes. When baked, remove from mould and let it cool down completely.
